Dessert Sauce

How long would a homemade creamy dessert sauce keep in the fridge?
I am thinking about opening a small restaurant and I am trying to plan out what foods can be made in advance, and what foods need to be made to order. I have a few dessert cream sauces and I was hoping that I could have them ready made and keep them in the fridge until they are served over desserts. How long might it last? One that I am thinking of adding to the menu has egg yolk in it. my parents always serve angle food cake with powdered sugar, whipped cream, strawberries, and strawberry jam (or sauce) not always all that stuff at the same time…but most likely with the whipped cream and strawberries.

Instructions:
Caramel Apple Salad
3 cups diced apples
Lemon juice
1 cup dry roasted peanuts
1 cup miniature marshmallows
1 small box sugar-free butterscotch instant pudding
1 (8 ounce) can crushed pineapple
1 (8 ounce) container fat free Cool Whip
Toss diced apples with lemon juice (just enough so the apples don't turn brown). Add peanuts and marshmallows.
In separate bowl, mix together butterscotch, pineapple and Cool Whip. Add to apple mixture. Keep refrigerated until ready to use.
You can use peeled apples or unpeeled.
Serving size: 1 cup
4 WW points per serving.
