Lovely bright green pea soup?
I had some English Green Pea Soup, it was amazing! My question is after all the cooking how do they get the green peas to stay so bright lovely green.
I have tried using fresh peas (not frozen), shocking them in an ice bath, lemon juice and even a crushed up Vit C tablet but never as bright as what I had at an upscale restaurant the other day.
So anyone know the secret?
You answered your own question, Petit Provencal or Precovil , English peas contain more sugars then most commercially produced peas. you stated that it was amazing which leads me to believe that outside of looking great it tasted great as well, the preservation of color and flavor can be achieve in two ways, the first is to cook the peas in an immersion circulator, I don't believe that, because of cost, that would be the case in a less then 4 Star restaurant, I'm also assuming that you had this soup IN a restaurant, the second way is basically the same as the immersion circulator with out the circulation, sealed cooking bag immersed in boiling water till peas are tender, mashed and added to a prepared soup base. Steaming is a great answer but steaming does a flavor wash/sweat leaving the peas just a little less then perfect.
