All Purpose Can I use Self-Rising Flour as a substitute for All-Purpose Flour?
I am stuck with Self-Rising Flour from when I was making cupcakes, and I have no all purpose flour. I don't want to buy any new flour until I am finished with this flour. Can I use Self-Rising Flour as a substitute for All-Purpose Flour? If so, how?
Yes. Just leave out the salt and baking powder that may be called for in your recipe... S/R flour aslready has that in it.

What are the benefits of pastry flour vs. all-purpose?
I am making a pie crust for a coconut cream pie and in parantheses next to the flour it says I can use pastry flour in its place. Will this make the crust more flaky and tender than if it was made with all-purpose flour? It appears (according to the recipe) that the ratio wouldn't be exactly the same. Any thoughts? And where can I find pastry flour? I am not sure they will have at my normal grocery store.
jamie --- I would stay with the all purpose
flour. I find that it's not so much the type of flour but rather the way the pie dough is put together that determines the flakiness of the crust. The least amount of water you can use is best, also the type of fat used
makes a big difference Lard being the best a good grade of shortening like Crisco is next best Butter is at the bottom of my list.
I use 1/2 the amount of fat as I do flour with a small amount of salt 1/4 tea spoon per cup of flour and 1/2 tea spoon sugar per cup (for browning ).Chill all ingredients in frig.for an hour before starting to mix crust.
Take out of frig. reserve 1/4 of the fat in freezer while you mix the other ingredients with a pastry blender. Take reserved fat out of freezer break up into small pea size pieces (add to blended mix stir in with a spoon until well distributed.) Add ice water a table spoon at a time until mix will form a clump that will hold together when squeezed
in your hand. Make mix into a round thick patty place on wax paper or plastic wrap.
wrap tightly Place in frig.for at least 1 hour
Over night would be better, Cut the dough in pieces that will fit the pie pan when rolled.
Roll dough to desired size and thickness.
At this point dough will be hard to handle.
Place rolling pin near the edge of the circle of dough roll the dough onto the rolling pin place the edge of dough just over the pan edge and gently unroll. Lift up slightly on hang over and push dough down in pan gently to conform to pan flute edges and trim off any excess dough. Prick bottom and edges with fork place an empty pan of the same size in side the crust press down gently. Bake @ 375*F about 10 min. remove empty pan finish baking untill golden brown .I HOPE THIS HELPS YOU

But anyway, the BEST thing to have on hand after giving birth to a baby you are going to breastfeed is APNO – All-Purpose Nipple Ointment. Your OB can write a prescription for it, and it’s a compound drug that you have to have made a special pharmacies that actually make drugs, not like Walgreens or something. But it’s got anti-inflamitories and anti-fungals and all this other stuff that helps prevent cracking, soreness, etc. I didn’t know about it until about a week after my first daughter was born. Let’s just say I got the prescription prior to the birth of my second daughter, and made sure to have it at the hospital with me in my birth bag. Started using it right away, and never had a problem!
